Knowing how to make a proper quesadilla opens up all kinds of possibilities for meals and snacking. You need flour tortillas (which have become a refrigerator staple in many households), some kind of melting cheese, and meat, chicken or seafood. In my kitchen, that means that I have the basics on hand all the time. Here is one of my favorite combinations, which adds tart sliced apples to the essentials. It is really great with homemade smoked turkey, of course, but you can use turkey from the delicatessen and still get a great quesadilla.
Servings: Makes 1 quesadilla, 6 wedges
- 2 flour tortillas
- 1/2 cup (2 ounces) shredded Cheddar cheese
- 1/2 cup chopped smoked turkey
- 1/2 Granny Smith apple , peeled and thinly sliced
- Make-Ahead Salsa or store-bought salsa , for serving, optional
Heat an empty large skillet over medium heat until the surface is hot. Place 1 tortilla in the skillet and cook until the underside is warm, about 20 seconds. Flip the tortilla over. Sprinkle the surface with half of the cheese, the turkey, the apple, and then the remaining cheese. Top with the second tortilla.
Cook until the underside is toasted, about 1 1/2 minutes. Flip the quesadilla and cook until the second side is toasted, about 1 1/2 minutes more.
Transfer the quesadilla to a cutting board and cut into 6 wedges. Serve hot, with the salsa, if desired.
