Ingredients


  • 1 cup thinly sliced raw broccoli (use a mandoline slicer if you have one)
  • 2 Tbsp. diced ricotta salata
  • 2 Tbsp. pine nuts, toasted
  • 1/4 cup vinaigrette (I prefer white balsamic vinegar because its light color looks better with this salad)
  • Salt and pepper to taste
  • Minced parsley, chives and shallots to taste

Directions


Toss all ingredients together in a bowl, and serve.
