This recipe can be made from scratch: Using all water, boil chicken wings or carcasses along with carrot, onion, and celery, plus the garlic, tomato paste, and clove listed below. Cook broth very gently for 10 hours, then strain it and discard the solids. If you choose the shortcut version, keep in mind that organic broth tends to have less sodium. Otherwise, use reduced-sodium broth, since the long simmer reduces its volume by 1/4 or more.

Ingredients
  • 2 quarts chicken broth
  • 3 cups water
  • 1 whole head garlic
  • 1 Tbsp.   tomato paste
  • 1 whole clove
Directions
In a large (4- to 5-quart) saucepan, bring broth and water to a boil. Cut garlic in half crosswise; add to broth, skin and all, along with remaining ingredients. Reduce to the barest simmer and cook 2 hours. Strain before using.
