One of Sprouted Kitchen blogger Sara Forte's specialties is one-bowl meals. This one includes brown rice, black beans, spinach and avocado, plus a tangy Roasted Pasilla and Goat Cheese Sauce.

Makes 1 ½ cups

Ingredients


  • ½ red onion, peeled and halved
  • 2 pasilla or poblano peppers
  • 4 Tbsp. olive oil
  • 4 oz. fresh goat cheese
  • ¼ cup toasted pepitas
  • 2 Tbsp. white wine vinegar
  • 1 tsp. honey
  • ½ tsp. chili powder
  • ¼ tsp. cayenne pepper
  • 1 lemon
  • 1 cup coarsely chopped cilantro
  • ¼ cup water
  • 1 tsp. salt
  • ½ tsp. ground black pepper

    Directions


    Total time: 20 minutes

    Preheat broiler. On a baking sheet, drizzle red onion and pasilla or poblano peppers with 2 Tbsp. olive oil. Broil until charred, 12 to 15 minutes. Let cool. Rub skin off peppers and remove stems and seeds. In a food processor, combine onion and peppers with goat cheese, pepitas, 2 Tbsp. olive oil, white wine vinegar, honey, chili powder, cayenne pepper and the juice of the lemon and process until smooth. Add cilantro, water, salt and ground black pepper and pulse to combine. Serve with brown rice, black beans, spinach and avocado
