Servings: Serves 6
- 2 medium butternut squash , halved, seeds removed, and sliced
- 2 Tbsp. honey
- 2 Tbsp. butter or olive oil
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
Preheat oven to 375°. Toss all ingredients in a large bowl. Spread on 2 parchment paper-lined cookie sheets and cover with foil. Bake until tender, about 1 hour.
