Quinoa Mushroom Salad

Try this quinoa recipe created by the women of the 20 Years Younger Challenge with the help of fitness expert Bob Greene.
Servings: Serves 4
- 4 cups quinoa
- 1 cup diced mushrooms
- 1 Tbsp. Bestlife™ Spread
- 2 Tbsp. extra-virgin olive oil
- 4 Tbsp. lemon or lime juice
- 2 Tbsp. fresh mint
Cook quinoa according to package instructions.
Sauté mushrooms in Bestlife™ Spread.
To make dressing: Mix oil, lemon or lime juice and mint in a small bowl.
To serve: Combine quinoa, mushrooms and dressing.
