Servings: Serves 4
Ingredients 4 cups quinoa1 cup diced mushrooms1 Tbsp. Bestlife™ Spread2 Tbsp. extra-virgin olive oil4 Tbsp. lemon or lime juice2 Tbsp. fresh mint
Cook quinoa according to package instructions.
Sauté mushrooms in Bestlife™ Spread.
To make dressing: Mix oil, lemon or lime juice and mint in a small bowl.
To serve: Combine quinoa, mushrooms and dressing.
