In a 10-inch sauté pan, melt butter over medium-high heat. Add apple slices, honey, and 2 sprigs thyme (if using). Cook, stirring often, until apples have softened and browned, 6 to 8 minutes. (Take special care not to burn the honey.)
Toast bread, and spread each slice with 1 to 2 Tbsp. quark. Top with cooked apples, divided evenly among the slices; drizzle with more honey and garnish with remaining thyme sprigs. From the June 2008 issue of O, The Oprah Magazine
