Ingredients 1 large egg3/4 cup apple juice1 1/2 cup frozen or fresh peaches1/2 cup applesauce1 cup oat flour1 cup quick oats1/3 cup cane sugar1 Tbsp. baking powder1 tsp. baking soda1 tsp. salt2 Tsp. cinnamon
Preheat oven to 400°. Mix dry and wet ingredients separately. Combine wet and dry ingredients and mix until incorporated. Lightly spray muffin tins with Pam nonstick cooking spray. Fill muffin tins 2/3 of the way full. Bake for 15 to 20 minutes. Let cool and serve.
