Chef Cameron Payne's Peach and Oat Muffins

This muffin is packed with flavor and is a healthy breakfast option for any diet.

Servings: Serves 6
Ingredients
  • 1 large egg
  • 3/4 cup apple juice
  • 1 1/2 cup frozen or fresh peaches
  • 1/2 cup applesauce
  • 1 cup oat flour
  • 1 cup quick oats
  • 1/3 cup cane sugar
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 Tsp. cinnamon
Directions
Preheat oven to 400°. Mix dry and wet ingredients separately. Combine wet and dry ingredients and mix until incorporated. Lightly spray muffin tins with Pam nonstick cooking spray. Fill muffin tins 2/3 of the way full. Bake for 15 to 20 minutes. Let cool and serve.
