Servings: Makes 4 servings
In a medium bowl, mix 1 pint mixed marinated olives (drained), 1/3 cup extra-virgin olive oil, 1 tablespoon chopped fresh rosemary, two 3-inch orange peels (use a vegetable grater or paring knife), and 1/4 cup fresh orange juice. Serve at room temperature.
