Mediterranean Potato Salad

Ingredients
- 4 pounds red potatoes
- 3 cloves chopped garlic
- 1/4 cup fresh-squeezed lemon juice
- 1/4 cup olive oil
- 1/4 cup chopped Italian parsley
- Salt to taste
Directions
Boil potatoes for 15 to 20 minutes. Mix all ingredients. Pour over peeled/cubed potatoes. Mix and enjoy.
