Originally, the final ingredient in this punch was pimento, a bit confusing since most people assume that it refers to the tiny red peppers stuffed into cocktail olives. Pimento is, in fact, the Jamaican term for allspice, which originated from the Spanish work "pimienta," or peppercorns. The tiny berries are extremely flavorful and are also used in Jamaican jerk recipes.
Serves 12 to 18
- 1 cup fresh lime juice (about 8 limes)
- 2 cups simple syrup or strawberry syrup
- 2 cups Light Rum
- 2 cups Water
- Ground allspice
In a punch bowl or a large pitcher, combine the lime juice and simple syrup until well blended. Slowly add the rum, stirring constantly.
Add the water 1 cup at a time, tasting as you go. Stop at 3 cups of water if you prefer a stronger punch. Add allspice to taste.
Serve in punch cups or lowball glasses filled with ice.
