When Irish chef Cathal Armstrong wants to put a special touch on his traditional pub fare—from bowls of steak and kidney pie (as pictured here) to a Bakewell tart—he works in this homespun, delectable version of crisp, flaky puffed pastry.
This is a variation on traditional Shepherd's Pie. Instead of meat, use azuki beans, and instead of mashed potato, try using creamed millet. The combination of grain and beans makes a more complete protein, this is a very balanced dish for vegetarians.
A visit to a local farmer's market on the Irish countryside inspired this dish full of giant bunches of kale, heads of cabbage and delicious Irish apples. Of course, feel free to add your own twist and use whatever veggies you can find locally.
