Curried Chicken Stir-Fry with New Potatoes and Snow Peas

This dish from author Mark Bittman combines the comfort of potatoes, the warmth of spices and the crunch of fresh snow peas. Using skinless chicken breast or thighs keeps it healthy, although you can also substitute tofu cubes or shelled peanuts for the chicken.
