Servings: Makes 10 cakes
Ingredients 1 pound fresh lump crabmeat2 Tbsp. chopped fresh parsley1 clove garlic , finely chopped1 large egg , lightly beaten1/2 lemon , juiced1 Tbsp. mayonnaise1 scallion , chopped1 tsp. dried dill1/8 tsp. crushed red pepper1/8 tsp. cayenne pepper1/4 cup bread crumbs6 Tbsp. olive oil
Mix all the ingredients, except olive oil, together. Form into patties about 3/4-inch thick and 2 inches in diameter. In a large skillet over medium-high heat, warm 3 tablespoons oil. Add half the patties. Sear until golden, 2 to 3 minutes on each side. Repeat with remaining oil and patties. Serve hot.
