1/2 cup sugar
2 cups gin
3/4 cup lemon juice, strained (from about 4 lemons)
Fruit, as desired, peeled and diced (you'll need about 1/3 cup fruit per drink):
Crushed ice, as desired
3 cups seltzer water
Total time: 25 minutes
Bring 1/2 cup water to a light boil. Add sugar and stir until sugar dissolves to create a simple syrup. Remove from heat and let cool.
In a pitcher, stir together simple syrup, gin, and lemon juice. Chill at least 30 minutes.
To make Tom Collins: In a glass, have guests mix together about 1/2 cup drink mix and about 1/3 cup fruit. Add crushed ice and stir with a muddler or a wooden spoon; top with about 1/3 cup of seltzer water.
