recipe for tortilla wraps, a breakfast dish from her complete seven-day menu
Servings: Serves 4
- 1 Tbsp. olive oil
- 4 slices turkey bacon cooked in a microwave for 5 minutes, or until crispy
- 6 eggs
- 1/2 cup reduced-fat Mexican cheese blend or cheddar cheese
- 4 large flour tortillas
In large bowl, beat eggs and cheese until well combined. Crumble cooked turkey bacon and add to the mixture. Heat a large skillet to medium-low heat, coat with nonstick spray and sauté egg, cheese and bacon mixture. Cook while scrambling eggs until firm.
Warm tortillas in oven or in sauté pan for 30 seconds, divide mixture evenly among 4 tortillas, wrap up and serve immediately.
