Servings: Makes 1 loaf
Ingredients
  • 1 large orange
  • 5 tablespoons unsalted butter , melted
  • 2 large eggs
  • 1/2 cup brewed espresso
  • 2 1/2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Directions
Preheat oven to 375°. Grease a 9 1/2" x 4 1/2" x 2 3/4" loaf pan. Grate orange for zest, then squeeze fruit to extract 1/2 cup juice. Blend juice and zest with butter, eggs and espresso in a small bowl. In a large mixing bowl, combine remaining ingredients. Pour orange mixture into flour mixture and stir, using a wooden spoon, just until blended.

Pour batter into prepared pan. Bake 50 to 60 minutes, until a toothpick inserted in center comes out clean. Cool on a rack 10 minutes, then remove from pan and set aside until completely cool. Slice and serve.
