Servings: Makes 1 loaf
Ingredients 1 large orange5 tablespoons unsalted butter , melted2 large eggs1/2 cup brewed espresso2 1/2 cups all-purpose flour1 cup sugar2 teaspoons baking powder1/2 teaspoon baking soda1/2 teaspoon salt
Preheat oven to 375°. Grease a 9 1/2" x 4 1/2" x 2 3/4" loaf pan. Grate orange for zest, then squeeze fruit to extract 1/2 cup juice. Blend juice and zest with butter, eggs and espresso in a small bowl. In a large mixing bowl, combine remaining ingredients. Pour orange mixture into flour mixture and stir, using a wooden spoon, just until blended.
Pour batter into prepared pan. Bake 50 to 60 minutes, until a toothpick inserted in center comes out clean. Cool on a rack 10 minutes, then remove from pan and set aside until completely cool. Slice and serve.
