- 12 egg whites
- 2 teaspoons cream of tartar
- 1 teaspoon salt
- 8 cups confectioners' sugar
- 2 cups cocoa powder
- 2 tablespoons chocolate pieces
Preheat oven to 300°. In a bowl, beat egg whites, salt and cream of tartar and beat until soft peaks.
Add sugar and cocoa powder at low speed. When combining, add chocolate pieces.
Prepare a sheet pan lined with parchment and sprayed with vegetable spray. Drop 1 ounce of meringue mix about 2 inches apart on the sheet pan and bake in the preheated oven 20 to 25 minutes until golden. Allow to cool on sheet pan. When cookies are cool, gently peel off parchment.
