Diri Blan (White Rice)
To get the rice just right—light, fluffy, unsticky—takes one part skill and two parts love.

Servings: Serves 3
Ingredients
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 2 tablespoons coconut milk (optional)
  • 1 tablespoon salt
  • 1 cup white rice
Directions
In a saucepan over medium heat, bring water, oil and coconut milk (if using) to a boil. Add salt and rice. Reduce heat to low and cook covered until water is completely absorbed, about 25 minutes. Grains should be tender and separate.
