Diri Blan (White Rice)

"It's supposed to serve four, says Edwidge, "but in our house it would serve two." Read her essay about the magic of rice , then try the simple recipe below.

Servings: Serves 2-4
Ingredients
  • 2 cups water
  • 1 Tbsp. vegetable oil
  • 2 Tbsp. coconut milk (optional)
  • 1 Tbsp. salt
  • 1 cup white rice
Directions
In a saucepan over medium heat, bring water, oil, and coconut milk (if using) to a boil. Add salt and rice. Reduce heat to low and cook covered until water is completely absorbed, about 25 minutes. Grains should be tender and separate.
