  • 1/2 cup toasted pine nuts
  • 1 clove garlic
  • 1/2 tsp. salt
  • 1 cup (packed) fresh cilantro leaves
  • 1 Tbsp. fresh lemon juice
  • 1/3 cup olive oil
  • 2 Tbsp. freshly grated Parmesan cheese
Pound and mash the pine nuts, garlic and salt in a "bump and grind" (mortar and pestle) until the nuts and garlic are finely ground. Add the cilantro and continue to pound and mash until the cilantro is finely ground. Mash in the lemon juice, and then mix in the oil. Stir in the cheese.
