Cinnamon-Roasted Sweet Potatoes

These potatoes rely on pure honey and fresh cinnamon sticks rather than butter and sugar for their candied flavor.

Servings: Makes 12 servings
Ingredients
  • 2 tablespoons honey
  • 2 tablespoons grapeseed or canola oil
  • 6 small sweet potatoes , scrubbed and halved lengthwise
  • Salt and freshly ground pepper
  • 6 sticks cinnamon
Directions
Preheat oven to 375°F. In a small bowl, whisk together honey and oil. Rub each sweet potato half with honey and oil mixture. Season potatoes with salt and pepper. Press a cinnamon stick between matching halves of each sweet potato and wrap potatoes in foil.

Place on a baking sheet and roast 30 minutes. Remove foil from potatoes and arrange, skin side up, on baking sheet. Set cinnamon sticks next to potatoes and return to oven. Bake until potatoes and cinnamon sticks brown lightly, about 30 minutes. Transfer to a serving platter.
