Serves 4

Ingredients

  • 1 cup low-fat vanilla, Greek frozen yogurt
  • 4 whole chocolate graham-cracker sheets, each one broken in half, crosswise
  • 8 tsp. melted dark chocolate
  • 4 walnut halves
  • 4 Tbsp. finely chopped walnut pieces

    Directions

Remove the yogurt from the freezer to soften slightly.

Using a teaspoon, spread 1 teaspoon of chocolate in a strip down the center of 4 of the graham-cracker halves, covering the cut lines. Immediately affix the walnut halves in the center, on top of the chocolate. Transfer them to a parchment-lined plate, or baking sheet, and put it in the freezer.

Spread the yogurt evenly over the remaining graham-cracker halves.

Check the graham crackers in the freezer; if the chocolate has set so the walnuts don't move, place the ones that had been in the freezer atop the ones with the yogurt. If they're not set, put all of the halves in the freezer until set (a couple of minutes, at most).

Arrange the chopped walnut pieces in a straight line a bit longer than a graham cracker on a plate or piece of parchment.

Once the sandwiches are assembled, lightly dip the sides in the walnuts (for ease, use extra walnuts).

Enjoy immediately, or wrap in parchment and freeze until ready to enjoy.
