Try this delicious recipe!
Servings: Serves 1
- 4 to 6 ounces skinless chicken breast (or one chicken breast)
- 3 to 4 to 6 slices turkey bacon
- 1/2 cup diced tomatoes
- 1/4 cup yellow peppers
- 1 tablespoon olive oil
- 1/4 cup red wine vinegar or favorite salad vinegar
Cut chicken breast into small pieces. Grill or lightly panfry with olive oil until chicken is fully cooked, approximately 10 minutes. Wash and tear Romaine lettuce into small pieces. Place lettuce in a bowl and top with tomatoes, peppers and chicken pieces. Mix oil and vinegar and pour over salad.
Tip: You can substitute your favorite fat-free salad dressing for the oil and vinegar.
