Fresh Thinking

When Cary Neff was the executive chef at Arizona's sumptuous Miraval spa, he put together a special healthy, delicious, and filling menu for O readers. Neff, the author of Conscious Cuisine, who would go on to work at La Costa Resort and Spa, says, "The idea is to look at the items that are best for us—fruits and vegetables and complex whole grains—and spend some time and energy making these dishes outstanding." The result? Food with less fat, more flavor—exactly what we're hungry for right now.
