Campari Cocktail

If you like grapefruit, you can't go wrong with this recipe from Gramercy Tavern in New York City.

Servings: Serves 8
Ingredients
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 grapefruit
  • 1 cup vodka
  • 1 cup Campari
  • 2/3 cup sweet vermouth
  • Splash of Moscato or other dessert wine
Directions
In a saucepan, simmer 1/2 cup sugar and 1/2 cup water until it reaches the consistency of thin syrup, about 2 minutes. Add 1 grapefruit, peeled and cut into 8 wedges. Simmer 5 more minutes. Cool mixture and transfer it to a pitcher. Add 1 cup vodka, 1 cup Campari and 2/3 cup sweet vermouth. Cover and steep at least 1 hour.

To serve: Pour Campari mixture halfway to the top of each chilled martini glass, and fill each almost to the rim with chilled fresh grapefruit juice. Top off with a splash of Moscato or other sparkling dessert wine.
