Servings: Makes 8 servings
- 1 cantaloupe , cut into 24 one-inch squares
- 1 honeydew , cut into 24 one-inch squares
- 1/2 watermelon , cut into 24 one-inch squares
- 8 wooden skewers , soaked 30 minutes in water
- 1/4 cup raw brown sugar
- 4 to 5 sprigs mint
Alternating fruits, place squares onto skewers. Heat broiler to high. Line a baking sheet with foil and spray with nonstick cooking spray. Place skewers on sheet and sprinkle with brown sugar; broil until slightly bubbly on one side, and turn to repeat, about 2 minutes per side. Remove and chill 1 hour. Garnish with mint.
