  • 2 skinless chicken breasts
  • Barbecue sauce
  • 1 cup broccoli
  • 1 cup baby carrots
  • 1 yam
Preheat oven to 350°F. Bake chicken in foil-covered baking pan for 40 minutes. Add water to chicken at 25 minutes to keep moist. At 30 minutes pour barbecue sauce over chicken. Wrap one yam in foil and bake in the preheated oven for one hour. Boil 2–3 cups of water in a pot and add carrots, continue to cook carrots until they are tender, approximately 10 minutes. Add broccoli and cook for 5 minutes. Do not overcook veggies, or it will drain out all of the nutrients. You can also cook the veggies in a steamer, if you have one.

Tip: Marinate chicken breasts in barbecue sauce and leave in the fridge until dinnertime.
