Ingredients Olive oil spread3 scallions , finely chopped1/2 cup extra-virgin olive oil2 (6-inch) baguettes , cut in half lengthwiseSalt and freshly ground pepper
Soak chopped scallions in cold water for 10 minutes to remove their raw heat. Drain well, and then mix with olive oil.
Toast baguettes. Spread scallion olive oil on top, and season with salt and pepper.
