Baguettes with Scallion Olive Oil Spread
Crispy baguettes with scallion olive oil spread—a gentle reinterpretation of garlic bread—can act as edible spoons!

Servings: Makes 4 servings

Ingredients:

Baguettes with Scallion Olive Oil Spread
  • Olive oil spread
  • 3 scallions , finely chopped
  • 1/2 cup extra-virgin olive oil
  • 2 (6-inch) baguettes , cut in half lengthwise
  • Salt and freshly ground pepper
Directions:

Soak chopped scallions in cold water for 10 minutes to remove their raw heat. Drain well, and then mix with olive oil.

Toast baguettes. Spread scallion olive oil on top, and season with salt and pepper.
