Avocado Shake
I know what you're thinking: No thank you! Let me explain why you should attempt this recipe. One of my buddies made an avocado shaved ice once, and it was outstanding. This takes it to a new level.

Servings: Serves 4
Ingredients
  • 4 ripe avocados
  • 1 can (14 ounces) sweetened condensed milk
  • 2 cups creamy vanilla ice cream
  • 1/2 cup whole milk
  • Whipped Cream (below)
  • 1 cup chilled heavy cream
  • 1/4 cup confectioners' sugar
  • 1 tsp. vanilla extract
Directions
To make whipped cream: Whip the cream using an upright mixer with a balloon whisk or a handheld electric beater until almost stiff. Gradually add the sugar, beating until well mixed. Add the vanilla. Beat until the cream holds peaks. Top shakes with dollops of the whipped cream.

To make shakes: Cut each avocado in half, discard the pits and scoop out the meat. Add to a blender and blend until finely chopped, about 1 minute. Add the remaining ingredients, reserving 6 teaspoons chopped cilantro for garnish. Blend until smooth, about 30 seconds.
