Arugula Salad
It's no-fuss!

Servings: Makes 4 servings
Ingredients
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cups baby arugula leaves , washed and dried
  • 1/2 small red onion , thinly sliced
  • 3/4 cup cherry tomatoes
  • Salt and freshly ground pepper
Directions
In a small jar with a lid, shake olive oil and lemon juice until mixed.

In a large salad bowl, combine arugula, red onion and tomatoes. Pour dressing over salad, then season with salt and pepper.
