Gluten Free Zucchini and Kasha Pilaf with Lima Beans

1 Kasha*

1/4 cup olive oil

1 medium onion, chopped

2 medium zucchinis, finely chopped

2 cups frozen lima beans, thawed

1 cup chopped cilantro

2 cloves garlic, mashed

salt and pepper to taste

-Heat the olive oil and saute the onion for couple of minutes.

-Add the zucchini, stir and cook over medium heat for couple of minutes.

-Add the lima beans, 2 cups of water, the salt and the pepper. Stir and bring to a boil.

-Add the kasha, the garlic and the cilantro. Stir, cover and cook over low heat for 15 minutes. Remove from the heat and allow the dish to rest covered for 5 minutes. Serve it with mixed salad or yogurt cucumber salad.

*Kasha: These are buckwheat groats that have been toasted.
