Meatloaf+carrots=Great!

Hey all I am sure this isn't new to anyone but I never thought about putting pureed veggies into meatloaf til I saw JS on Oprah! I am still waiting to get my book but was excited tonight when I made meatloaf the way I usually do but mashed (with a fork) carrots and added it to the mixture. I made a nice sized meatloaf and about 20 meatballs. It was sooo good. I was so surprised that you really can't taste it! Now, we are all veggie eaters, so I gave this to my son (4) with a side of pasta and broccoli and he LOVED it. (He isn't much of a meateater but he liked it!). My daughter who is only 17 months had a few bites but my husband didn't even know it was in there til after... SUCCESS! He thought it was a clever way to get some extra veggies in (he had broccoli as a side dish). Thanks Jessica, I can't wait to try the Brownies this weekend! Karen

Meatballs also make a great place for hiding veggies. Try making rice and adding shredded carrots...yum! Chicken broth will give it a good flavor. Another good one? Beef stew .....just imagine the options. Chop up the veggies nice and small so they will "disappear" into the sauce. I also add barley to my beef stew and serve ( extra fiber). Also remember kids are picky eaters by nature. I was horrible according to my mother...never ever ate fish until I was 21 years old. Vegetable, forget it! Now, I steam and eat all my veggies and love fish! The trick is to slowly give up the secret and eventually incorporate the children in replacing ingredients with you.
