Dear all,
I have been using Jessica's recipes and happy with the results.
however, I have a question about the puree. Wouldn't it be better if we use raw veggies to make the puree instead of cooking them? I heard there are more nutrients in RAW veggies than the ones we cook. Besides, the puree will be DOUBLE COOKED because it will be part of a dish (for example, a burger or a brownie) and this dish itself will be cooked. So, aren't we loosing too many nutrients by double cooking?
Thank you for your help!
hi, joaozao--in my opinion, you are right about not wanting to double cook the veggies, and trying them raw is a good idea. i do question the wisdom of the original premise of the book; would it not be better if the kids just learn to eat veggies as is? that way , they wouldn't have to learn it later in life. also, you would not have been deceiving them all their young lives...i know from my own personal experience that veggies are much more appealing to me if i am not over-eating sweets and other junk food. 'nough said?
