Don't know anything about ground ostrich, sorry. Just a warning, whatever meat you use, DO NOT USE AMOUNT OF BLACK PEPPER CALLED FOR HERE!! Use only 1/2, i.e., for 4 lbs. meat, use 1 Tbsp., if you cut the recipe in half as I did, use only 1/2 Tbsp. Mine was awful, after all that work, tasted like a slab of meat with PEPPER.
